Slow Cooker Chicken Cacciatore

Crockpot Chicken CacciatoreThis is one of the easiest and cheapest recipes ever.  3 ingredients… around $15 for 5 servings!

Ingredients

10 skinless chicken thighs (some people like it with the bones, some boneless… that’s really preference)
1 bag of Trader Joe’s frozen Fire Roasted Bell Peppers and Onions (of course, if you don’t have a Trader Joe’s or somewhere else that has frozen, you can just slice up one each of a red, yellow and green pepper and an onion)
1 28-ounce can of crushed tomatoes (I like the one with basil)

Directions

Put the chicken and crushed tomatoes in the slow cooker… cover and cook on low for about 6 hours or high for about 3, until the chicken is cooked through and easily shredded.

Shred the chicken and mix with the peppers and onions in the slow cooker.  Cook for another hour.  You can leave the cover off if you’d like the sauce to thicken up.

Each of 5 servings is ABOUT 450 calories, 67 grams of protein, 13 grams of fat and 17 grams of carbs (you just want to check based on how much your chicken actually weighs).

  1. All these recipes sound delicious. I have never owned a crockpot, but I am a big fan of turning the oven on to 225 degrees and cooking everything low and slow. I wonder if I will get the same result!
