Cheesy Egg Casserole
Make one of these casseroles and you’re set for breakfast for the week!

When you’re trying to rush out the door or steal every possible moment in your bed or shower instead of in the kitchen, a healthy breakfast can be a challenge.  One of the most frequest requests I get is for easy breakfasts that can be prepped ahead of time.

We’ve tried a few different variations over the years in Cooking Club and I have to admit that while I’d eat the various egg dishes we made (and I even posted one recipe here a few years ago), I wasn’t in love with any of them. The texture after a day or two just turned me off.

I think we’ve finally come up with the winner!

The key here (and something I’ve been meaning to write about for awhile) is cottage cheese. I actually started experimenting with adding cottage cheese to my scrambled eggs before I tried this casserole and I LOVED it. It really makes the whole thing more quiche-y and light and tasty.

The other great thing about this basic recipe is how easy it is to mix it up and add different things each time you make it.

Here are the basics:

6 large eggs
2 cups cottage cheese
2 cups spinach (gotta get those greens in!)
salt and pepper to taste

I pretty much always also add some pre-cooked, diced chicken sausage; I use 4-5 links, whatever comes in the package.

Preheat oven to 350 degrees.

Mix everything in a bowl and pour into a 9×13 baking dish you’ve sprayed with cooking spray.

Bake for about one hour, or until the the casserole is cooked through.

I cut the casserole into 6 or 8 pieces depending on how many people are eating and how hungry they are.

Some of the combinations of sausage/veggies/cheese I’ve been enjoying lately include:

Andouille sausage + 1 pound mushrooms, sauteed
Apple maple sausage + 2 bell peppers, diced
Spicy jalapeno sausage + 1 cup shredded cheddar cheese (either mix it in or sprinkle it on top about halfway through the cooking time
Sweet Italian sausage + 1 cup shredded mozzarella cheese

Try your own favorite combos! (I use all pre-cooked chicken sausage links. If you use a fresh sausage, cook it separately first.)

I’m not including the macros here because there is so much room for variation depending on what kind of cottage cheese you use, what kind of sausage, what kind of cheese, etc.  MyFitnessPal has a free calculator you can use to figure it out based on what you mix in and how many servings you make.
