Make Ahead Baked EggsI am NOT a morning person.  I’m always running late, I’m usually cranky… and I’m hungry.  I had a Costco order coming from Instacart so, on a whim, I added 3 dozen eggs (it *was* Costco ;)) and decided to figure out something to do with them for breakfast for the week.

I love a fritatta… and they’re relatively easy… but I was feeling too lazy even for that.  Then i remembered a recipe I’d pinned from thekitchn.com for an oven omelet and decided to start there and just make it as easy as possible.

And, really, this could not be any simpler! I made a batch and cut it in quarters for breakfast for four days.

Ingredients

10 eggs
1/2 cup milk
10 oz mushrooms

Directions

Preheat oven to 375.

Saute the mushrooms in a nonstick pan.

Whisk eggs and milk together in a medium to large bowl.  Mix in the mushrooms.

Spray a 9×13 baking dish with nonstick or olive oil spray.  Pour mixture in pan.  Bake for 45 minutes or until a knife inserted in the middle comes out clean.

Of course, you can mix this up by adding all sorts of things… diced ham, browned sausage, cheese, peppers… whatever you want.  It also works great with a mixture of eggs and egg whites… for a batch like this, try 3 eggs and a cup of egg whites.  Try eating it hot and cold and see which you like better!

For 1/4th of this version:  235 calories, 13 grams of fat, 5 grams of carbs (1 gram of fiber), 20 grams of protein.
