
One of my favorite veggies to make is asparagus… just snap the ends off, spray with olive oil, sprinkle with salt, pepper and parmesan cheese and bake. The asparagus is great… but, the BEST part may be the little clumps of parmesan cheese that bake into little salty globs of deliciousness.
So you can imagine how excited I was to find Parmesan Crisps in my mom’s cupboard… an awesome snack, but, as I discovered when I went shopping, a bit on the expensive side.
Since I’d made a similar snack accidentally, I figured it couldn’t be too hard to do on purpose! I did a little searching on the internet and found that, yes, it’s pretty easy. One great suggestion I saw was to buy a whoopie pie pan to make the construction a little easier… I actually found a mini whoopie pie pan which I thought would make them the perfect size.
I had a couple of friends over when I was unpacking the pan and was talking about my plan for the cheese snacks and one of them suggested adding turkey pepperoni… which sounded BRILLIANT to me.
So, tonight was the big experiment… and I’d call it a definite success! They weren’t really crispy like the store-bought snacks, but, I think that’s because of the pepperoni. They were a little on the greasy side, but, I think that’s to be expected when you’re just baking cheese and pepperoni. I found them to be a perfect, salty, decadent treat!
And this is SO EASY.
Like I said, I did this with a mini whoopie pie pan, but, I really think you can do it with a plain cookie sheet. I don’t even think you need any cooking spray because of the oil from the cheese and pepperoni.
Ingredients
24 slices of turkey pepperoni
1/2 cup grated parmesan cheese
Directions
Lay out 24 piles of a 1/2 teaspoon of grated parmesan cheese on a mini whoopie pie pan or plain cookie sheet, flattened out a bit to the size of a piece of turkey pepperoni. Top each with a slice of pepperoni and another 1/2 teaspoon of cheese.
Bake at 400 degrees for 10 minutes.
THAT’S IT!
For each of 2 servings of 12 bites: 185 calories, 11 grams of fat, 4.5 grams of carbs (0 grams of fiber), 16.1 grams of protein.
