
A happy accident at Cooking Club helped us come up with a recent fave recipe. We were planning on making this recipe from Skinnytaste, but when I looked over at the person who was putting it together, I wasn’t sure what I was seeing in the big silver bowl. I asked, “uh, what’s the white stuff in there?” She told me “the mozzarella cheese!” I pointed out that the cheese was supposed to go on top later… but, hey, what was done was done, let’s see how it turns out!
Well, it turned out great! And so much easier to just dump everything in a bowl and go from there. So now we have Inside Out Turkey Parmesan Meatloaf. 🙂
2 lbs lean ground turkey (I like to use half 94% lean and half 99% lean)
1/2 cup seasoned bread crumbs
1/3 cup grated pecorino romano cheese
2 large eggs
2 cloves crushed garlic
1 T tomato paste
2 T cup fresh minced parsley
1 t kosher salt
3/4 cup marinara sauce
1/2 cup shredded mozzarella cheese
Preheat oven to 350
Combine all ingredients and mix gently to combine.
Spray cookie sheet with cooking spray or cover with foil.
Form turkey mixture into ¾ cup football-shaped mini meatloaves.
Bake 45 minutes or until they reach an internal temp of 165.
For each of 6 servings: 298 calories, 11 grams of fat, 10.3 grams of carbs (.7 grams of fiber), 41.2 grams of protein.
