Make Ahead Baked EggsI am NOT a morning person.  I’m always running late, I’m usually cranky… and I’m hungry.  I had a Costco order coming from Instacart so, on a whim, I added 3 dozen eggs (it *was* Costco ;)) and decided to figure out something to do with them for breakfast for the week.

I love a fritatta… and they’re relatively easy… but I was feeling too lazy even for that.  Then i remembered a recipe I’d pinned from thekitchn.com for an oven omelet and decided to start there and just make it as easy as possible. Continue reading

Hamburger/Cheeseburger Casserole

Hamburger/cheeseburger casseroleI’m so excited to finally post this recipe!  We’ve made it about a dozen times in Cooking Club and I think we finally perfected it!  I also love that it’s a good demonstration of how you can take a recipe and use it as a starting point to really make it your own… whether you’re tweaking it for taste or specific nutritional concerns, etc.  This is actually adapted from a recipe on Skinnytaste.com (one of my very favorite places to get recipes) which was in turn adapted from a recipe in Bobby Deen’s cookbook From Mama’s Table to Mine: Everybody’s Favorite Comfort Foods at 350 Calories or Less. Cowboy Chili

cowboychiliOne of the things I like about making chili or stews or casseroles is you don’t have to worry about following a recipe exactly.  Have some roasted corn? Use it! Don’t have roasted corn? Use a can of plain corn.  Making 2 different recipes? Split the corn!

I was at Trader Joe’s and saw that they had lean beef already cut into cubes and I was feeling lazy and wanted the quickest, easiest thing to throw in the crockpot so I picked up a couple packages of the beef and a couple of bottles of their Cowboy Caviar and went from there… (if you can’t get to a Trader Joe’s, here’s a copycat recipe for the salsa).

So here’s the version of Cowboy Chili I happened to make last night… I’m sure it will be a little different next time. 😉 Continue reading

Chunky Pork Chili

chunkyporkchiliA day in front of the TV (Lord of the Rings marathon FOR THE WIN!) is a great excuse to make something in the crockpot.  My roommate was baking it up in the kitchen so I needed something really easy that wasn’t going to take much space to put together.  I had pork in the fridge I’d bought with the intention of making pulled pork, but, since we made that the day before in Cooking Club, I didn’t want any more… so I settled on pork chili (I never actually knew there *was* such a thing until a business trip last week where I had it in a little hole in the wall Mexican restaurant!).

This was delicious! It may be one of the best chilis I’ve ever made… and SO EASY. Continue reading
